Buy Next-Gen Pouilly-Fuissé White Burgundy Wine from Domaine de la Chapelle
One of the top cuvées from winemaker Pascal Rollet, and what a wine it is! This stunning Chardonnay, harvested in the hamlet 'Aux Bouthières', is fully aged in oak barrels. Since the 2020 vintage, this 'lieu-dit' has been promoted to 1er Cru level. The wine has a brilliant straw-yellow color and reveals aromas of white peach, bergamot, candied lime, and lemongrass on the nose. These scent components perfectly reflect in the flavor and the long finish, sourced from their Aux Bouthières vineyard in Pouilly.
New oak, rich, juicy yet dry, with underlying notes of Earl Grey tea - bergamot, candied lime, nuttiness, beeswax, and a crème brûlée finish, complemented by a refreshing mineral acidity. The most complete wine in the world for around 40 euros. These wines generally benefit enormously from at least a year of bottle aging, but even in its youth, it outshines the competition.

Pascal Rollet, The Goat
Located in the heart of the Pouilly-Fuissé appellation, in the historic hamlet of Pouilly, the estate covers just 7.65 ha. If you have ever visited Southern Burgundy, it's likely you have dined at La Courtille de Solutré, where Pascal Rollet's wines from Domaine de la Chapelle are always highly sought after on the wine list. Pascal, often wearing a cowboy hat, has remained humble despite his fame and is always willing to let us taste his wines when he’s not working in the vineyards. However, he prefers to spend all day among his vines. The best calling card of Sud-Bourgogne is their Pouilly-Fuissé cuvée named AX-B, with its characteristic southern Chardonnay curves and endless rays of sunshine in the glass. AX-B is an acronym for Aux Bouthières, their 1er Cru vineyard. However, this plot is more an extension of the same terroir of the Aux Bouthières vineyard, which has not yet been certified. Technically, it is not yet a 1er Cru, though it surely will be. For now, it remains a wonderful understatement.

What is produced in the Mâconnais?
The Mâconnais is primarily known for its white wines, mainly made from the Chardonnay grape. The region has several appellations, with Mâcon-Villages, Viré-Clessé, Pouilly-Fuissé, and Saint-Véran being the most prominent. These wines are fresh, fruity, and often characterized by fine minerality reminiscent of the top wines from northern Burgundy but with a softer and more approachable style. The wines from the Mâconnais often display a pronounced terroir that subtly differs from village to village, giving each bottle its unique character.
What dishes pair well with Mâconnais wines?
