Discover the surprising wines of Aurore Bachelet, a rising talent in the wine world, whose career is off to a promising start.
From a renowned winemaking family that has maintained vineyards along the Côte de Beaune since the mid-19th century, Aurore Bachelet followed in her father Vincent Bachelet’s footsteps after studying oenology. After five years working under his guidance, she decided to forge her own path. With a few valuable plots gifted by her father and the acquisition of a premier cru vineyard in Clos Roussots in Maranges, she currently manages a modest two hectares of vineyards. Known for presenting refined, elegant, and delicate wines in an authentic and pure manner, Aurore produces true Burgundies of elegance rather than power. For each vintage, she aims to honor Burgundy’s identity, keeping her winemaking approach minimally interventionist.
A true Côte de Beaune-style Chardonnay, sourced from 35-year-old vines with a southeast orientation on limestone clay soils near Santenay. Fermented and aged in oak barrels for 12 months, followed by 5 months in stainless steel. A stunning classic white Burgundy crafted by young talent Aurore Bachelet. Even in its youth, this wine has characteristics of a grander wine. In blind tastings, the Côte de Beaune origins are unmistakable. Wonderfully dry, flinty/silex, smoky, with fresh lemon on the palate. Toward the finish, a hint of candy and a lovely almond and roasted nut finish. 13% alcohol.
This wine pairs perfectly as an aperitif with gougères or cheese puffs, or with a variety of seafood dishes.
The Côte de Beaune, located in the southern part of the famous Côte d'Or, is one of Burgundy's most prestigious wine regions. Known for its refined Chardonnay and elegant Pinot Noir, the Côte de Beaune offers an exceptional combination of quality and diversity in both white and red wines. Despite the fame of surrounding villages like Puligny-Montrachet and Meursault, the region rewards us with new and relatively affordable talent for wine lovers seeking high-quality wines at a better price-to-quality ratio.
The Côte de Beaune is globally renowned for its sublime Chardonnay wines, especially from the appellations of Puligny-Montrachet, Chassagne-Montrachet, and Meursault. These wines are known for their rich, full flavor with notes of citrus, honey, and butter, supported by a distinctive minerality. The Pinot Noir wines from villages like Beaune, Pommard, and Volnay are elegant with fine tannins, red berries, and earthy notes, giving each bottle a unique character. These wines are often refined and develop beautifully over time.
The wines from the Côte de Beaune are versatile and pair excellently with refined dishes. The fresh and mineral Chardonnay wines complement seafood, fish dishes like grilled salmon, and creamy sauces. They also pair perfectly with soft cheeses such as Brie, Camembert, and Comté. The Pinot Noir wines from the region are ideal with poultry, veal ribeye, and refined meat dishes like duck or coq au vin. Earthy dishes like mushroom risotto or roasted vegetables also make a perfect match with these wines.
