One of the finest cuvées from winemaker Pascal Rollet and perhaps the best-kept secret from Pouilly-Fuissé is this latest cuvée from Domaine de la Chapelle. A stunning Chardonnay harvested from the adjacent hamlet ‘Aux Bouthières’ and fully aged in oak barrels. Since the 2020 vintage, this 'lieu-dit' has also been elevated to Premier Cru status. AX-B is an acronym for Aux Bouthières, which is their 1er Cru vineyard. However, this plot is located right next to Aux Bouthières, more as an extension, which has not yet been certified. Technically, it is not yet a 1er Cru, although it certainly will be. To complicate matters further... this wine also includes juice from the premier cru vineyard Aux Bouthières as well as some from the adjacent vineyard that is still unclassified. Because it is not 100% from this single vineyard, it cannot carry the name of this vineyard. Hence the codename Ax-B. Premier Cru quality at entry-level Burgundy pricing. Don’t tell anyone! Or only to your best friends.
New oak, rich, juicy yet also dry, with underlying Earl Grey - bergamot spices, dry candy, beeswax, crème brûlée finish, and refreshing mineral acidity. This is the most complete wine around €35 in the world. Its wines generally benefit immensely from at least 1 year of bottle aging. The perfect wine for this Christmas or the next one if you can keep a hold on yourself. If you want to ante up you can also go for their 100% premier cru which has a little more pronounced oaked notes for even more structure and longevity for more development along the road. I recommend serving this 1er Cru no sooner then late 2025. Although is already more then enjoyable.
This is a serious wine, so it should be served with serious food. Smoked dishes pair beautifully with the nose, and the fatty texture complements fatty fish types nicely. Also works wonders with Pheasant and Jerusalem artichoke, porcini mushrooms and duck liver. The minerality of this particular Pouilly Fuisse lifted the foie gras to new heights. And at temperature the nuttiness of the wine came alive complimenting the porcini mushrooms.

As promised, here’s the recipe for the roulade / roll so you can make it yourself for Christmas dinner. This dish can be prepared in advance, leaving minimal work during the meal. Check out the photos with descriptions, and feel free to message me if you have any questions!
Right before serving, slice the roulade into your desired thickness, carefully remove the plastic wrap, and warm it up in an oven at 130°C or gently fry it in a pan. Serve with cubes of fried black pudding, Brussels sprout leaves, Jerusalem artichoke, and a fine jus made from the pheasant carcass, optionally enriched with some foie gras for an ultra-luxurious Christmas dish!
