Very refined and juicy white Bourgogne, made from 100% Chardonnay, sourced from vines that are over 35 years old, growing on a limestone and clay soil. The wine offers fresh juicy aromas of nectarine, white peach, yellow apple, and a subtle hint of vanilla. This cuvée is slightly fresher and fruitier than the also available Les Pierres, which has a bit more richness and minerality.

Pascal Rollet, The Goat. Located in the heart of the Pouilly-Fuissé appellation, in the historic hamlet of Pouilly, the estate spans only 7.65 ha. If you have been to southern Bourgogne even once, chances are you have dined at La Courtille de Solutré, where Pascal Rollet's wines are consistently among the most sought-after on the wine list. Pascal, often wearing a cowboy hat, remains very down-to-earth despite his fame and is always willing to let us taste something when he’s not working in the vineyards. But he prefers to spend the whole day among his grapes. Their Pouilly-Fuissé cuvée called AX-B is the best calling card of Sud-Bourgogne, with its characteristic southern Chardonnay curves and infinite amounts of sunshine in the glass. AX-B is an acronym for Aux Bouthières. That is their 1er Cru vineyard. However, this parcel is precisely in line with the Aux Bouthières vineyard but acts more as an extension of the same terroir, which is not yet certified. Technically, therefore, it is not yet a 1er Cru, although it certainly will be. For now, we do not yet have to pay for this future certification.
