Biodynamic white Burgundy from the Côte Chalonnaise.
Treat this wine like a pre-2000 Chablis if you will. A bone-dry but also friendly style from the past that many are still looking for but rarely find. This eventful 2021 vintage revives these times! Personally, I normally drink this wine with sushi and oysters.
2021, the ''Daluz'' cuvee is nowadays called ''Ecume de Terre'' due to vintage complications however resulting in a sensational, lively chard. Juicy fresh and comforting at the same time! Age of vines 45 years. Manual harvest in small crates. Cold fermented in 228L and 400L oak barrels. Airy texture. Singing minerals, saline, crisp, wet stone. Fresh lemon 🍋 Flowery veggies, vanilla, white peaches notes on the nose and the perfect round vanilla cream assist on the finish making you second guess if it was oak assisted. Afterwards cleansing acidity. Vin de emotion👌Serve with apéro or with goats cheese or salads. White fish. Shakshuka.
